Peach Pie


I don't usually bake anything with the local fruit I buy in the summer. The taste of fresh strawberries, blueberries or peaches is just so scrumptious that it seems a shame to mask that natural goodness. I mean, really, I can do that all winter with less-than-perfect fruit. And since we're living in the suburbs, I usually pay a premium price for fruit at the farmer's market. But I do love pie, and since I got such a great deal recently on half a bushel of peaches, I figured that this time I could spare a few. I used a trusty Betty Crocker recipe for the pie, and topped with vanilla bean ice cream I couldn't pick a better way to end the day.
