Busy Mama's Rice and Beans

Yesterday was one of those days when I just couldn't get anything done. But that's to be expected with little ones in the house. So it's good to have an easy supper for such days. And this recipe fits the bill for being easy to fix and relatively healthy. Even though the rice takes a while to cook, this recipe is a keeper for us since we nearly always have the ingredients on hand in the pantry. Also, since there are no vegetables to chop, you can easily make this while carrying a baby on your hip.

Only three ingredients:
brown rice
a can of beans (black, kidney, or even chili beans in sauce), rinsed
your favorite salsa

I usually fix a cup and a half of rice, cooked in 3 cups of water. Bring to a boil and let simmer for about 45 minutes. Once the rice is done, stir in the beans, and about a cup of salsa. That's it!
