Kale

I love having kale growing in our garden. Kale is incredibly healthy, but I can't say that I'm especially fond of this nutritional powerhouse. I didn't grow up on cooked greens, so I still find it challenging to consume a lot of them. But, I do like to throw some kale in my morning smoothie. In order to do this, I would usually have to buy a bunch of it from the grocery store, and then while it loses nutritional value sitting in my fridge, it ends up going bad before I manage to use all of it. And I feel bad about the waste.

The kale in my garden, on the other hand, is just sitting out there fresh and full of nutrients until I'm ready to cut it. I make smoothies most mornings during the summer, and I'm able to just step outside and cut a few leaves of kale, and also some spinach, to add some good greens to our breakfast.

Here's a purple variety I picked up at a garden center in the early spring. I've been surprised how tall it's already grown.

These are a couple of white russian kale plants that I started from seed. If you look closely you can see where I've been snipping away at them.
